How to pick the perfect ripe mango

A ripe mango gives slightly when you press near the stem — never squeeze the cheeks hard.
Look for a sweet, fruity aroma at the stem end. For Alphonso, a golden blush with green shoulders is normal; Langda may stay greener even when ripe inside.
Store at room temperature until soft, then refrigerate if you need an extra day before serving.
